Clisson is a medieval city cradled between the charming rivers Sèvre & Maine, with an Italian architecture, in the heart of the Muscadet Sèvre & Maine appellation, where the history of our domain has continued over 9 generations. We are two brothers, Stéphane & Vincent, devoted to our job as organic winegrowers. We prodcue a diversity of Muscadets resting on their lees from a few months to over 3 years for our Cru CLISSON. We also make other white, red and sparkling wines.

CLISSON & GORGES, two exceptional crus

The Muscadet village crus have emerged after deep reflection between winegrowers on how best to reveal the identity specific to each terroir. These crus are produced with the grape variety Melon Blanc. They conform to a highly demanding set of specifications and represent the high-end of the Pays Nantais wines. Their richness and ageing potential allow them to pair beautifully with French gastronomy.

We are currently working to maintain the balance of living things in our soils and in our vines. We are convinced that the quality, complexity and richness of a wine are obtained by understanding nature and working everyday in the vines.

We have started to plant hedges and set up nesting boxes for bats and tits all around our vineyard. This technique has two essential roles: to provide food, refuge and reproduction areas for wildlife and to protect our crops from bad or hot weather by reducing soil erosion.

Over the years, we’ve started looking towards healthier farming methods, both for our health and for the protection of our ecosystem. We care about the protection of the biodiversity in our soils and within the vines, guaranteeing the pure expression of our terroir in our wines. Since our ECOCERT certification in 2010, our whole vineyard has been cultivated organically. Our philosophy has naturally led us towards a responsible and sustainable way of farming, allowing us to produce organic wines and tell beautiful stories…

The very best terroirs of Domaine des Cognettes produce two fabulous Village Crus, recognised by INAO since 2011, CLISSON on granite and GORGES on gabbro.

Knowing our terroirs and our plots requires a long process of observation and questioning as we are dependent on weather conditions, which are different each year. Therefore, we must constantly adapt to the behaviour of the vines, diseases, grass and the expression of the wine. We refine our cultivation approach by cross-checking our observations over the years in order to improve the quality of the plant and its grapes.

We mainly harvest by hand with a crew of around thirty harvesters. The picking and sorting of the grapes are carried out in the vines to collect the healthiest possible harvest each year. Whole bunches of grapes are then taken to the press for pressing. Fermentations take place naturally thanks to the yeasts present on the skin of the grapes.
